If you work in a medium or larger organisation you could look for opportunities to work with a software project as a subject matter expert or get seconded onto the project to undertake user acceptance testing.

You should also consider introductory professional testing courses available from Equinox. This does show employers that you have taken the initiative and are serious about moving into software testing.
